Grilled Polenta with Sausage Sauce

Ingredients

1 pound hot and/or sweet Italian-sausage links, casings removed
1 large onion, chopped
1 package (24 ounces) precooked polenta, cut into 12 slices
1 can (28 ounces) crushed tomatoes in purée
1 package (12 ounces) frozen Italian-style green beans

Method

  • Heat nonstick 12-inch skillet over medium-high heat until hot.
  • Add sausage and cook until browned, about 8 minutes, stirring frequently to break up sausage.
  • With slotted spoon, transfer sausage to bowl. Discard all but 2 teaspoons sausage drippings.
  • Reduce heat to medium. To drippings in skillet, add onion and cook until soft and golden, about 15 minutes, stirring occasionally.
  • Meanwhile, preheat broiler. Place polenta slices on rack in broiling pan; sprinkle with 1/4 teaspoon coarsely ground black pepper. With pan at closest position to source of heat, broil polenta for 5 minutes.
  • With wide metal spatula, turn polenta over and broil 5 minutes longer or until lightly golden.
  • To onion in skillet, add tomatoes with their purée, frozen beans, and sausage. Heat to boiling over medium-high heat. Reduce heat to low, cover and simmer 8 minutes.
  • Serve polenta slices with sausage sauce.
