Pasta with Turkey Sausage

Sausages are quite simply one of the most versatile
foods. After a recent program on BBC2 it became clear
that finding good quality sausages was not always easy.
The site began from a small mailing list which, as the
numbers swelled, caused the site to be set up in order
to share recipes, cooking tips, and details of where
the best sausages are to be had.

links Turkey ausage
3 cloves Garlic, chopped fine
1 tbsp Rosemary, fresh and chopped fine
3 tbsp parsley, chopped coarsely
1 x 28 oz tinned plum Tomatoes
1/4 cup Olive oil, extra virgin
1/3 lb cheese, fresh mozzarella or goat cheese
3 tbsp Parmesan cheese, freshly grated
1 lb Rigatoni pasta
4 links of turkey sausage in most of the olive oil
to which 3 cloves of chopped garlic has been added.
2 - 3 minutes add about a tablespoon of chopped fresh

preferably plum tomatoes. Chop them either prior to
or after adding them.

add a couple of table spoons of oil to them to keep

the mixing bowl. Mix all of this well with a large
spoon or your hands, then put it into an oven proof
at 375° for 30 - 35 minutes.

you are not in the mood to make a casserole, simply
cook the rigatoni and use the sauce as is. To do this,
add the mozzarella or the goat's cheese to the tomato
sauce, and warm it until the mozzarella or goat's
cheeses melt and the sauce has incorporated all of
the cheese. Serve the pasta using this sauce, then
top each dish with the cut up sausage, and a couple
of spoonfuls of grated Parmesan cheese.
