Portuguese Chicken and Peas

This recipe comes from a website called Gil's Portugese Recipes which sums up in a nutshell what the site is all about.

Gil says: "Being of Portuguese heritage these recipes have been my comfort foods for a long time. My grand-parents were all Portuguese. My Dad's mom was born in Brazil and she was a cousin to the late great Carmen Miranda. As a native of New Bedford, Massachusetts, I grew up in a predominantly Portuguese neighborhood. There were Portuguese restaurants on almost every corner. Portugese cooking uses seafood in great abundance because of its fishing industry, so fresh fish and wonderful Portuguese sausages makes only for great meals . . . "

2 tbsp olive oil
1 tbsp butter
1 medium to large onion, sliced
1 chicken, about 2 lbs, cut into pieces
6 oz chicken stock
2 oz dry red wine (Portuguese wine is best of course )
Salt and pepper to taste
1 lb frozen peas

  • Heat the butter and the oil together in a heavy casserole.
  • Add the onion and cook until transparent. Remove and keep warm.
  • Put the chicken in the casserole and lightly brown on all sides.
  • Add the onion, stock, wine and salt and pepper.
  • Cover and cook over low heat until the chicken is done, about 1 hour.
  • Before the chicken is done, add the peas and heat through.

Serves 4
