Banana Cake

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


1/2 cup soft margarine or butter
1 1/2 cups white sugar
2 eggs (beaten)
1 teaspoon vanilla
1 cup mashed banana
1/3 cup buttermilk
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

  • Preheat oven to 350°.
  • Cream butter and sugar together.
  • Beat in the eggs and add vanilla.
  • Mix the banana with buttermilk.
  • Blend the dry ingredients into the liquid mixture.
  • Spread in 2 greased round 8 inch layer pans.
  • Bake 25 to 35 mins or until a tooth pick inserted comes out clean.
  • Cool and frost with butter icing or peanut butter icing.

Makes 1 cake
