comes from New Zealand, is now living with his
wife and children in Copenhagen as he is currently
principal Dancer with The Royal Danish Ballet.

be talented in the kitchen as well but he has
agreed to share some of his recipes with us which
is great news.
ounces frozen chopped spinach
1/2 cup mayonnaise
3 tablespoons water
1 tablespoon lemon juice
1 teaspoon prepared mustard
1/4 teaspoon tarragon
1/8 teaspoon white pepper
1 tomato, sliced
3 English muffins
1/8 teaspoon paprika
a saucepan, combine mayonnaise, water, lemon
juice, prepared mustard, tarragon, and white
pepper; stir until smooth.
over low heat, stirring constantly, for about
3 to 4 minutes.
divide sliced tomato among toasted english muffins.

top with poached eggs.
