Recipe for family meals :

Brazilian Rice

This is one of the recipes that has been provided by Shirley Cline from San Francisco in response to my quest for recipes using Balsamic Vinegar. (You can contact Shirley by emailing her - click here).

Shirley says: "The orange peel and nuts add to this dish".


3 cups water
2 cups raw brown rice
1 tsp. salt
3 Tblsp. butter
1 tsp. chili powder
1/8 tsp. garlic powder
1 tsp. brown sugar
1 tsp. very finely grated fresh orange rind (I use a zester)
1 cup sliced Brazil nuts
1 small can chopped black olives, drained

  • Boil the water.
  • Add rice, salt, butter, chili powder, garlic powder, brown sugar and finely grated orange rind.
  • Stir briefly, cover, lower heat and cook for 30 - 40 minutes or until moisture is absorbed and rice is tender.
  • Stir in nuts and black olives.
  • Cover and let stand for several minutes over a very low heat.
