Minnesota Wild Rice and Mushrooms

"Wild Rice is not really rice at all. It is the seed of a marsh grass with long black or dark brown grains. My adopted State of Minnesota produces wonderful wild rice. Traditionally it was harvested by the Indigoes Natives who shook the grains from plants, that lived in shallow water, into their canoes. It has a nutty flavor".

Ingredients

1/2 cup Wild Rice Grains
1 x 10 1/2 ounce can of Chicken Stock
1 x 10 1/2 ounce can of water
1/2 cup onions, diced
1 cup fresh mushrooms
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon of corn starch

Method
  • Wash and put the wild rice into a 1 1/2 quart saucepan, add the chicken stock and water. Bring to a boil and then reduce to a simmer. Cook for a total of 45 minutes, stirring every so often.
  • After the rice has cooked 35 minutes, sauté the onions and mushrooms in the olive oil and butter in a separate frying pan.
  • When the onions are nearly transparent, add to the rice and stir.
  • Add the corn starch to a tablespoon of water, stir until all the lumps are gone and add to the rice and stir.
