Cranberry Oat Bran Muffin

As the oldest of six children and Rebecca has always been in the kitchen. She loves to cook and bake and collect recipes. She had her own bakery for six years and now works for a retail bakery. She now has a total of twenty-five years experience in the baking and cooking field. In Beckys B Sweet Cookbook of Desserts, her first cookbook, she has gathered one hundred dessert recipes that she likes to make and most of which are very easy to make.

"These muffins are low in fat and sodium with a zero cholesterol. There are only 190 calories per muffin".


2 cups flour3 egg whites, slightly beaten
1 cup oat bran
1/2 cup skim milk
1/2 cup brown sugar
1/3 cup orange juice
2 tsp baking powder
1 tsp grated orange peel
1/2 teaspoon baking soda
1 cup coarsely chopped cranberries
1/2 cup miracle Whip cholesterol free dressing

  • Put paper cups in muffin tin.
  • Mix dry ingredients together.
  • Add the rest of the ingredients except cranberries, mix until moist.
  • Fold in cranberries.
  • Fill cups almost full.
  • Bake for 15 to 17 minutes or until golden brown.
