This
recipes comes from Dancer and Graphic artist Martin
James. Martin, who originally comes from New Zealand,
is now living with his wife and children in Copenhagen
as he is currently principal Dancer with The Royal Danish
Ballet. You will be able to find out more about Martin

Being
so gifted it seems unfair that Martin should also be
talented in the kitchen as well but he has agreed to
share some of his recipes with us which is great news.

Ingredients
4
cups fresh cranberries, washed and drained
1 1/4 cups sugar
1/4 teaspoon cinnamon
1 13oz jar orange marmalade
2 Tablespoons lemon juice
1 cup chopped walnuts or pecans, toasted
Method
- Place
cranberries in a large bowl.
- Combine
sugar and cinnamon.
- Spoon
into 9" square baking dish and cover with foil. Bake
at 350° for 45 minutes.
- Remove
from oven and stir in orange marmalade and lemon juice.
- Stir
in walnuts or pecans and mix well.
Serve
warm or cold.
