Recipe for family meals :

Christmas Sour Cream Potato Salad

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. You will be able to find out more about Martin when his Biography page is published.

Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

Martin also does his own recipe Newsletter, which is where this recipe actually came from, so if you would like to subscribe to it then click here

1/3 cup Italian Salad Dressing
7 medium potatoes, cooked in skins, peeled, and sliced (about 6 cups)
3/4 cup sliced celery
1/3 cup sliced green onion
4 hard boiled eggs
1 cup mayonnaise
1/2 cup sour cream
1 1/2 teaspoons prepared horseradish mustard
salt to taste
celery seed to taste

  • Pour Italian dressing over warm sliced potatoes and chill for two hours.
  • Add celery and onion.
  • Separate egg whites from yolks, chop and add.
  • In small bowl, sieve yolks (I just mash them with a fork).
  • Mix with mayonnaise, sour cream and mustard then fold into salad.
  • Add salt and celery seed to taste and chill for two hours.
  • Take some of the green onion stalk and pimento to decorate the top in a festive Christmas manner.

Serves 8
