Mint Snowballs

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

Ingredients

1/2 cup Icing Sugar
1/2 cup Shortening
1/2 cup Butter
1/2 tsp Peppermint Flavouring
2 cups All Purpose Flour
1/2 tsp Salt

Method
  • Cream sugar, shortening, butter and peppermint extract thoroughly.
  • Add flour and salt and blend well.
  • Add dry ingredients to creamed mixture and mix well.
  • Form into one inch balls, place on cookie sheet and cook in 400°F oven for 8 - 10minutes.
  • Cool on rack.
  • To decorate dip tops in icing, pink and green, and then in coconut.
