Recipe
for family meals :
This
is one of the recipes that has been provided by Vandana
who is very much a keen cook of Indian dishes. Hopefully
there will be more to come!
I
asked Vandana for a little background information:
"I
live in Pune, India. I am a South Indian so many of
my recipes are from that area. I enjoy cooking and my
family and friends do say that it is appetizing! By
profession I am a Relocation Consultant and the India
head of an International Charity. I hope that covers
the introduction".
Ingredients
6
slices of white / whole wheat bread
2 potatoes boiled and mashed
a pinch of turmeric powder
1 green chili
1/2 tsp fresh ginger chopped
1 tbs coriander leaves chopped
1/2 tsp lime juice
salt to taste
For
the batter:
1 cup chick pea flour
1/4 tsp red chili powder
1/4 tsp baking soda
salt to taste

cups of vegetable oil for deep frying
Method
- Make
a paste of green chili and ginger.
- Take
the boiled and mashed potatoes, add the paste, lime
juice, coriander leaves, turmeric and salt to taste.
Mix well and keep aside.
- Take
bread slices and make 3 sandwiches out of them using
the potato mixture as a filling. Press each sandwich
well and cut them into 4 or 9 pieces depending upon
the size of the bread slice.
- Make
the batter of the flour by mixing all the ingredients
and then adding enough water to make the batter of
thick pouring consistency.
- Heat
oil a frying pan, dip each small piece of potato sandwich
and deep fry till golden.
- Serve
with tomato ketchup.
