Digestive Biscuits

Ingredients

200 gm whole meal flour
1 tsp baking powder
sq salt
50 gm brown sugar
50 gm medium oatmeal
100 gm butter
sq milk

Method

  • Mix all the dry ingredients in a bowl
  • Rub in the butter
  • Mix in a sufficient quantity of milk to bind the mixture
  • Allow the dough to rest in the fridge
  • Roll out the mixture with a rolling pin and dock to prevent air pockets forming underneath during baking
  • Cut to the required size using a round cutter and place onto a baking sheet lined with silicone paper or a silicone mat
  • Bake in a moderate oven 180°C for approx 15 minutes
