Oatmeal Cookies

Ingredients

200 gm icing sugar
400 gm butter
200 ml golden syrup
400 gm flour
1 tbs baking powder
sq salt
400 gm rolled oats

Method

  • Cream the butter and the sugar until almost white
  • Gradually add the syrup
  • Mix in the sifted flour, baking powder, salt and rolled oats
  • Allow the dough to rest in the fridge
  • Roll out the mixture with a rolling pin and dock it to prevent air pockets forming underneath during baking
  • Cut to the required size using a round cutter and place onto a baking sheet lined with silicone paper or a silicone mat
  • Bake in a moderate oven 180°C for approx 15 minutes
