Poached Eggs in Catsup

"A little tartness has been added to counter the sweet catsup and liquid was added to accommodate cooking smaller portions in a standard frying pan".


2 eggs
1/3 cup catsup
1/3 cup water
1 tablespoon vinegar
1 tablespoon butter.
1/3 cup cheddar cheese
2 slices of toast

  • Mix the water, vinegar and catsup in an 8 inch frying pan that has a tight fitting lid. Cook over a medium flame until the mixture starts to barely bubble. Then add the butter and stir until melted.
  • Carefully add two eggs, cover, and simmer for 3 minutes.
  • Remove the eggs with a slotted spatula and place on toast. Then pour the catsup mixture on top, followed by the cheese.

Serves 1
