Winter Tomato and Cuumber Salad

"At least here in Minnesota, tomatoes that are grown inside in hot houses, or by hydroponics, are often lacking in the intense flavor of garden tomatoes. This salad exploits those hidden flavors that are only soluble in fat or alcohol. However, since the salt will start to leach the water from the vegetables, and dilute the dressing, this salad should be eaten within the hour".

Ingredients

1 Cup Sliced Tomatoes
1 Cup Peeled and Sliced Cucumber
1/3 Cup Sliced Onion.
3 Tablespoons Olive Oil
1 Tablespoon Gin OR Vodka
1 Tablespoon Lemon Juice
1/4 Teaspoon Ground Mustard
1/4 Teaspoon Salt

Method
  • Combine the liquids and spices in a glass or plastic container with a tight fitting lid.
  • Beat the mixture with a fork until it starts to thicken.
  • Add the vegetables, put on the lid, and shake several times.
  • Refrigerate for at least 20 minutes but no more than one hour .
