Recipe for family meals :

Tuna Melts

This recipe comes from Liz Alderson who runs a UK recipe site called find-a-seafood-recipe.com <click here>

The title of the site really speaks for itself but if you would like to find out more about Liz, its creator and editor, then have a look at her page under the Biography section <click here>

This second of my canned tuna fish recipes is more of a snack and answers the "I'm hungry - have you got anything to eat" question - whip this up out of the storecupboard.

Ingredients

1 can tuna
1 can sweetcorn
4 tbspns mayonnaise
4 oz (100g) finely grated hard cheese
8 slices bread

Method
  • Heat your grill and toast your bread (or use a toaster, but heat your grill anyways!)
  • Mix together the tuna, sweetcorn, mayonnaise and cheese.
  • Butter one side of the toast and spread the tuna mixture - heat under the grill until bubbling.
  • Any left over mixture is great for sandwiches - yeah, there's really going to be some left over

Serves 4
