Monmouth Pudding - Pwdin Mynwy

This recipe comes from the web site of Debbie and Trev Jones who live in Birmingham, England and have put their website together in the hope of finding find out about their Jones ancestors from the UK. The Jones ancestry dates back to 1775 and Cardiganshire, Wales. It follows their forefathers journey to Merthyr Tydfil, Glamorgan and some of the achievements they made, particularly in the world of professional football, for over fifty years. Although Jones is a common name, this is by no means a common family.

Ingredients

1 oz butter
1 oz sugar
3/4 pint milk
Grated rind of 1 lemon
6 oz fresh white breadcrumbs
3 egg yolks
4 - 5 tablespoons strawberry jam

Method

  • Set oven to 350°F or Mark4.
  • Put the milk in a saucepan and add the butter, sugar and grated lemon rind and bring to the boil.
  • Put the breadcrumbs in a bowl and pour the hot milk mixture over them.
  • Allow to cool and swell.
  • Stir the egg yolks into the cooled mixture and then spread half into a greased, ovenproof dish.
  • Melt the jam, pour half of it over the mixture, add remaining mixture and finish with a layer of jam.
  • Bake for 40 - 45 minutes until set.
