1 leek, chopped
4 rashers bacon, chopped
2 oz cream cheese
Salt and pepper
1 oz cheddar cheese, grated
the potatoes in the oven for as long as may be necessary.
cool a little and cut in half.
the leek in a saucepan with the bacon for a few minutes;
the bacon fat should be sufficient.
scoop out the centres of the potatoes from the skins
into a bowl, mash and add the cream cheese and the
leek and bacon together with salt and pepper to taste.
back into the skins, top with grated cheese and grill
until golden brown and bubbly.
