Whipped Cauliflower

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

4 ounces heavy cream
3 Tablespoons butter
2 or 3 bacon rashers
4 cups cooked cauliflower
2 tablespoons sour cream
6 ounces grated gruyere or Monterey Jack cheese
salt and pepper to taste

  • Mash the cauliflower then place it in a mixing bowl with the cream, butter, sour cream, salt and pepper to taste.
  • With an electric hand mixer, puree all ingredients until there is a thick consistency.
  • Cook the bacon until crisp. Break the bacon into small pieces and mix through the pureed mixture.
  • Spread into a casserole dish, and top with the cheese.
  • Place in a 350°F oven for 20 minutes or until the cheese has melted and browned slightly.
