Saffron Chicken

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

Ingredients

8 chicken breast halves, marinated

Marinade:
1 cup plain yogurt
2 Tbsp. olive oil
1 Tbsp. fresh herbs
1 tsp. chopped onion
1 clove minced garlic
salt and pepper, to taste
1/4 tsp. saffron

Sauce:
1 cup white wine
1 Tbsp. olive oil
1 medium size onion, chopped
1 medium size tomato, chopped
1 cup fresh spinach
1 Tbsp. fresh lemon juice
1 Tbsp. garlic, chopped
1/2 cup heavy cream

Method

To prepare chicken:

  • Mix marinade ingredients together well.
  • Marinate chicken, covered, in refrigerator, for 6 hours, turning occasionally.
  • Drain chicken well and place on grill or in oven and cook until done.

To prepare sauce:

  • Saute onion, tomato and chicken in olive oil and white wine. Simmer to reduce.
  • Add salt and pepper and spinach, cream, garlic and lemon juice.
  • Simmer to reduce, watching so cream does not separate.
  • Add saffron and mix at the moment you are ready to serve.
  • Pour sauce over chicken, to serve.
