It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
8 chicken breast halves, marinated
Marinade:
1 cup plain yogurt
2 Tbsp. olive oil
1 Tbsp. fresh herbs
1 tsp. chopped onion
1 clove minced garlic
salt and pepper, to taste
1/4 tsp. saffron
Sauce:
1 cup white wine
1 Tbsp. olive oil
1 medium size onion, chopped
1 medium size tomato, chopped
1 cup fresh spinach
1 Tbsp. fresh lemon juice
1 Tbsp. garlic, chopped
1/2 cup heavy cream
Method
To
prepare chicken:
- Mix
marinade ingredients together well.
- Marinate
chicken, covered, in refrigerator, for 6 hours, turning
occasionally.
- Drain
chicken well and place on grill or in oven and cook
until done.
To
prepare sauce:
- Saute
onion, tomato and chicken in olive oil and white wine.
Simmer to reduce.
- Add
salt and pepper and spinach, cream, garlic and lemon
juice.
- Simmer
to reduce, watching so cream does not separate.
- Add
saffron and mix at the moment you are ready to serve.
- Pour
sauce over chicken, to serve.
