Chicken Fettuccine in Bourbon Sauce

"A good quality bourbon will turn an otherwise interesting way to use leftover chicken into an impressive meal for two. Serve with a salad."


1 cup chicken meat, cooked and diced
1/2 cup onions, diced
1 garlic clove, diced
1 tablespoon butter
2 teaspoons flour
1/8 teaspoon ground red pepper
1/2 cup chicken broth
1/2 cup half-and-half
1/4 cup bourbon
1 cup fettuccine noodles, uncooked

  • Cook the fettuccine according to package instructions.
  • Melt the butter in a frying pan and sauté the onions until transparent, then add the garlic.
  • Add the flour and the red pepper, stir, and then the half and half, followed by the chicken stock.
  • Add the bourbon, followed by the chicken.
  • Stir until the sauce has thickened and the chicken meat is hot.
  • Pour over cooked fettuccine in a serving bowl.
