Balsamic Chicken Pasta

Ingredients

1/2 cup cooked chicken breast, diced
1/4 cup Balsamic Vinaigrette
1 cup dried pasta. (I like Rotini)
1/2 cup diced tomatoes (canned is just fine)
2 tablespoons black olives, pitted and diced (canned is ok)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil

Method
  • Cook the pasta according to package instructions (about 8 minutes) and drain.
  • Add the balsamic vinaigrette to the bottom of a serving bowl, followed by the pasta, tomatoes and olives.
  • Toss to coat, and then add salt and pepper and splash on the olive oil.
  • Serve hot or refrigerate for an hour and serve as a salad.
