English Toffee

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

Ingredients

2 cup sugar
1 cup butter
2 tbsp vinegar
1/4 cup golden syrup
1/4 cup water

Method

  • Combine all Ingredients in large saucepan.
  • Bring to the boil, stirring until everything has dissolved, then boil without stirring until the mixture is a dark golden colour.
  • Test by spooning a few drops into a cup of cold water. The toffee is done when it hardens at once into a crisp ball.
  • Take off the heat and pour into a flat oiled pan to make a layer about 1/2 inch thick.
  • When toffee is tepid, score into squares, and when cool break with a hammer and store in an airtight container.
