Black Bottom Pie

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1/2 cup sugar
1 x 9" baked pastry case
1 tbsp cornflour
1 tbsp unflavoured gelatine
2 cup scalded milk
4 x egg yolks, beaten
1/4 cup cold water
1 tsp vanilla
1/2 tsp vanilla extract
6 oz semi-sweet chocolate bits
4 x egg whites
1/2 cup sugar


  • Combine cornstarch and 1/2 cup sugar.
  • Slowly add milk to egg yolks, then stir into sugar and cornstarch mixture.
  • Cook in double boiler, stirring constantly, until it coats the spoon.
  • Remove from heat and add vanilla.
  • Remove one cup of this custard mixture and stir in chocolate bits until melted.
  • Pour chocolate mixture into pastry case and chill.
  • Soften gelatine in water and add to remaining hot custard, stirring until gelatine is dissolved.
  • Add flavouring and chill until slightly thickened.
  • Beat eggs whites until soft peaks form. Gradually add remaining sugar while beating, until stiff.
  • Fold custard and gelatine mixture into egg whites and pile over chocolate layer in pie case.
  • Chill until set and garnish with chopped walnuts.
