It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1/2
cup sugar
1 x 9" baked pastry case
1 tbsp cornflour
1 tbsp unflavoured gelatine
2 cup scalded milk
4 x egg yolks, beaten
1/4 cup cold water
1 tsp vanilla
1/2 tsp vanilla extract
6 oz semi-sweet chocolate bits
4 x egg whites
1/2 cup sugar
Method
- Combine
cornstarch and 1/2 cup sugar.
- Slowly
add milk to egg yolks, then stir into sugar and cornstarch
mixture.

Cook in double boiler, stirring constantly, until
it coats the spoon.
- Remove
from heat and add vanilla.
- Remove
one cup of this custard mixture and stir in chocolate
bits until melted.
- Pour
chocolate mixture into pastry case and chill.
- Soften
gelatine in water and add to remaining hot custard,
stirring until gelatine is dissolved.
- Add
flavouring and chill until slightly thickened.
- Beat
eggs whites until soft peaks form. Gradually add remaining
sugar while beating, until stiff.
- Fold
custard and gelatine mixture into egg whites and pile
over chocolate layer in pie case.
- Chill
until set and garnish with chopped walnuts.
