Fruit Creme Brulee

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

Ingredients

4 x egg yolks
3 tbsp sugar
1 x pinch salt
2 cup double cream
1 tsp vanilla
1 x fresh sliced peaches
1 x fresh strawberries

Method

  • Beat egg yolks until slightly thickened.
  • Gradually add sugar and a pinch of salt.
  • Bring double cream to boil and then pour slowly into egg mixture, stirring continuously.
  • Add vanilla and pour into baking dishes.
  • Set them in a pan with one inch of water and bake at 350°F for 45 minutes to 1 hour. Test to see if they are done with a clean knife.
  • Sprinkle top with sugar and / or top with fresh sliced peaches or strawberries.
