It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
13
lb tomatoes
1 tbsp dry mustard
1 lb celery
12 red chillies
2
x sticks cinnamon
1 qt small onions, chopped
2 lb brown sugar
3 x green peppers
1/4 cup salt
1/2 tbsp minced cloves
1 qt cider vinegar
Method
- Scald,
then peel tomatoes.
- Cook
peeled tomatoes for 15 minutes and then drain off
half juice.
- Chop
remaining vegetables and add to tomatoes. Simmer for
about 90 minutes.
- Tie
spices in cloth bag. Add bag of spices and remaining
ingredients to tomato mixture and continue cooking
for a further 90 minutes.
- Remove
bag of spices and seal mixture in hot, sterilised
jars.
