Date Cake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

Ingredients

3 cup dates, cut up
1 1/2 cup shortening
3 cup boiling water
6 x eggs
3 tsp baking soda
3 tbsp Cocoa
4 cup sugar
4 1/2 cup flour
1 cup chopped nuts
2 cup chocolate bits

Method

  • Mix dates and water and allow to cool.
  • Combine 3 cups sugar, shortening, eggs, cocoa and flour.
  • Add baking soda to date mixture and combine.
  • Pour into 2 greased loaf pans and sprinkle with topping of 1 cup sugar, nuts and chocolate bits.
  • Bake at 350°F for 45 - 50 minutes. slice and serve hot.
  • Garnish with whipped cream.
