It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1/2
cup shortening
2 3/4 cup flour
2 tbsp orange rind, grated
1 tsp soda
1/2 tsp salt
1/2 cup brown sugar
1 tsp cinnamon
3 x eggs
1 tsp mace
1 cup molasses
1 tsp nutmeg
1/4 cup orange juice
1/2 cup raisins
1/4 cup brandy, fruitjuice or coffee
Method
George
Washington's mother's recipe uses no ginger. Fruit juice
or coffee may be substituted for brandy.
- Cream
shortening and orange rind together.
- Add
brown sugar gradually and cream thoroughly.

Blend in well beaten eggs.
- Beat
hard for 1 - 2 minutes to make a smooth batter.
- Sift
flour, soda, salt and spices together and add to creamed
mixture alternately with the molasses and mix of orange
juice and brandy.
- Pour
into well greased and floured 8" X 12" X
2 1/2" pan.
- Bake
at 350°F for 30 - 35 minutes.
