Spiced Gingerbread Cake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1/2 cup shortening
2 3/4 cup flour
2 tbsp orange rind, grated
1 tsp soda
1/2 tsp salt
1/2 cup brown sugar
1 tsp cinnamon
3 x eggs
1 tsp mace
1 cup molasses
1 tsp nutmeg
1/4 cup orange juice
1/2 cup raisins
1/4 cup brandy, fruitjuice or coffee


George Washington's mother's recipe uses no ginger. Fruit juice or coffee may be substituted for brandy.

  • Cream shortening and orange rind together.
  • Add brown sugar gradually and cream thoroughly.
  • Blend in well beaten eggs.
  • Beat hard for 1 - 2 minutes to make a smooth batter.
  • Sift flour, soda, salt and spices together and add to creamed mixture alternately with the molasses and mix of orange juice and brandy.
  • Add raisins.
  • Pour into well greased and floured 8" X 12" X 2 1/2" pan.
  • Bake at 350°F for 30 - 35 minutes.

Makes 1 cake
