Savoury Spinach

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

Ingredients

2 lb Spinach, trimmed and washed
6 tbsp butter, softened
1 x salt
1 x pepper, freshly chopped
1 x nutmeg, pinch
1 x clove garlic, small
1/2 cup pine nuts
1/2 cup seeded raisins
1 x ham, smoked (optional)

Method

  • Cook spinach for about 5 minutes in a saucepan.
  • After squeezing thoroughly to rid of as much water as possible, chop it coarsely and put into saucepan with the softened butter and other seasonings.
  • Stir over very low heat until butter is almost absorbed.
  • Add small clove of garlic, crushed in garlic press, 1/2 cup pine nuts, 1/2 cup seeded raisins (softened 5 minutes in hot water).
  • Cover and cook over very low heat for about 5 minutes, stirring constantly.
  • Turn into a hot vegetable dish.
  • A cup of chopped, smoked ham may be added if desired.
