Springtime Potatoes

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1 1/2 lb potatoes, new, small
1/2 cup cucumber, chopped
1 1/2 tbsp green onion, chopped
2 tbsp green pepper, chopped
2 tbsp Radishes, sliced
1 tsp salt
1 x pepper, dash
1/2 cup sour cream


  • Wash and scrape potatoes.
  • Cook until tender in boiling, salted water.
  • Drain potatoes.
  • Combine remaining ingredients.
  • Heat, but do not boil.
  • Pour sour cream mixture over hot potatoes.
