It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1
pk spinach, frozen, chopped
1/2 cup cottage cheese
1/2 cup onions, chopped
1 cup Swiss cheese, grated
1/2 cup celery, chopped
2 x eggs
1/2 x butter, stick
1 cup milk
1 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
1 x 9" pastry case, deep
Method
- Cook
spinach in salted water according to package directions.
Drain well.
- Saute
onion and celery in butter until onion is soft.
- Into
a deep pastry shell spread cottage cheese over bottom.
- Mix
spinach with onion mixture and spread over cottage
cheese.

Sprinkle Swiss cheese over top.
- Combine
eggs, milk and seasonings and pour over all.
- Bake
at 350°F for 40 - 45 minutes or until set.
