It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1
x Aubergine, large
4 x tomatoes
1 x green pepper, diced
1/4 cup olive oil
1/2 x clove garlic, finely finely chopped
1 x pepper, freshly minced
1 x onion, med, sliced
1 1/2 tsp salt
1 x sour cream (optional sauce)
Method
- Heat
oil in skillet and add onion, green pepper and Aubergine.

Stir over low heat until Aubergine is soft.
- Add
tomatoes (may substitute canned Italian tomatoes,
drained), salt and pepper.
- Simmer
for a few minutes.
- At
this point you can add basil, chives, parsley, tarragon
or oregano to taste.
- Turn
into casserole dish and bake at 325°F for 40 minutes.

Casserole may be served hot or cold, with sour cream.
