Aubergine Croquettes

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

Ingredients

2 x Aubergines, peeled and cubed
1 cup strong cheese, grated
1 cup bread crumbs, seasoned
2 x eggs
2 tbsp parsley, fresh, chopped
2 tbsp onion
1 x clove garlic, finely chopped
1 cup corn oil
1 tsp salt
1/2 tsp pepper

Method

  • In covered saucepan, cook Aubergine in a small amount of boiling water until tender, about 4 - 5 minutes.
  • Drain and mash.
  • Stir in remaining ingredients except oil.
  • Shape into patties.
  • Fry in hot oil until golden brown, about 5 minutes on each side.
