Escalloped Potatoes

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

6 cup raw potatos, sliced thin
3 tbsp butter
3 tbsp flour
1 1/2 cup milk
1 tsp salt
1 x cayenne
1 cup grated cheese
3/4 cup green pepper thinly sliced


For sauce:

  • In a saucepan, melt butter, then blend in flour.
  • Cook over moderate heat and slowly stir in milk.
  • Season with salt and cayenne.
  • Continue cooking until sauce is smooth and boiling.
  • Reduce heat and add cheese, stirring, until cheese is blended.
  • Add green pepper and cayenne stir, and remove from heat.

For potatoes:

  • Grease a baking dish and fill with alternate layers of potatoes and sauce.
  • Bake in oven at 350°F until potatoes are done, about 1 1/2 to 2 hours. Potatoes may be turned with a spoon to ensure even cooking.
