It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
6
cup raw potatos, sliced thin
3 tbsp butter
3 tbsp flour
1 1/2 cup milk
1 tsp salt
1 x cayenne
1 cup grated cheese
3/4 cup green pepper thinly sliced
Method
For
sauce:
- In
a saucepan, melt butter, then blend in flour.
- Cook
over moderate heat and slowly stir in milk.
- Season
with salt and cayenne.
- Continue
cooking until sauce is smooth and boiling.
- Reduce
heat and add cheese, stirring, until cheese is blended.
- Add
green pepper and cayenne stir, and remove from heat.
For
potatoes:
- Grease
a baking dish and fill with alternate layers of potatoes
and sauce.
- Bake
in oven at 350°F until potatoes are done, about
1 1/2 to 2 hours. Potatoes may be turned with a spoon
to ensure even cooking.
