Recipe for family meals :

Asparagus Strata

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

"The most indispensable ingredient of all good home cooking - love, for those you are cooking for" ~ Sophia Loren.

1 tin asparagus, pieces or spears
4 x cheese slices
8 x bread slices, thin
4 x eggs
4 cup milk
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp pepper

  • Place 4 slices of bread, with crusts removed, into greased 8" X 8" X 2" pan.
  • Put slice of cheese on each piece of bread, then place asparagus evenly on top of cheese.
  • Top each with another slice of bread.
  • Mix egg, milk, salt, pepper and mustard and pour over bread.
  • Leave in the fridge overnight.
  • Sprinkle top with additional grated cheese and bake at 350°F for 45 - 50 minutes or until custard is set (knife comes out clean when inserted).

As a variation, use ham slices instead of asparagus and top with corn flakes and 4 tablespoons of melted butter.
