Chicken in a Pot

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

2 x chickens, quartered (2 1/2 lb each)
1/2 cup olive oil
1 x onion, lg, finely chopped
1 x clove garlic, finely chopped
1 tsp salt
3/4 tsp pepper
1 x medium tomato, chopped
1/2 cup dry white wine


  • In Dutch oven or heavy kettle, brown 2 chickens in olive oil until golden brown.
  • Add onion, garlic, salt and pepper.
  • Cover and simmer for 30 minutes.
  • Add tomato (may substitute 1/2 cup drained canned tomatoes) and wine.
  • Simmer for 30 minutes longer or until chicken is tender.

Serves: 8
