Chicken Pie

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

4 cup cooked chicken
2 tsp salt
1 cup celery, finely chopped
4 x eggs, slightly beaten
1 cup soft bread crumbs
2 cup chicken broth
2 tbsp parsley, finely chopped


  • Cut chicken into rather large pieces.
  • In a greased casserole dish add alternate layers of chicken, celery, crumbs and parsley.
  • Add salt and eggs to the chicken broth and mix thoroughly. Pour over the chicken mixture.
  • Bake in pan of hot water (bain marie) in moderate oven, about 350°F, for 1 hour or until mixture does not stick to knife blade.
  • Cover with Drop Biscuits
