Crab
Stuffed Chicken Breasts

It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will

Ingredients
6
x chicken breasts
1/2 cup onion, chopped
1/2 cup celery, chopped
3 tbsp butter
3 tbsp white wine, dry
7 1/2 oz crabmeat, flaked
1/2 cup herb stuffing mix
2 tbsp all purpose flour
1/2 tsp paprika
1 pk hollandaise sauce mix
3/4 cup milk
2 tbsp white wine, dry
1/2 cup Swiss cheese, grated
1 x salt
1 x pepper
Method
- Skin
and bone chicken breasts and pound to flatten.
- Sprinkle
with a little salt and pepper.
- Cook
onion and celery in 3 tablespoons of butter until
tender.
- Remove
from heat and add 3 tablespoons wine, the crab and
stuffing mix and toss.
- Divide
mixture among the chicken breasts.
- Roll
up and secure with a cocktail stick.
- Combine
flour and paprika and coat chicken.
- Place
in 11" X 7" X 2" baking dish, drizzle
with 2 tablespoons of melted butter.
- Bake
uncovered in the oven at 375°F for 1 hour.
- Blend
hollandaise sauce mix and milk. Cook, stirring, until
thick.
- Add
remaining wine and cheese. Stir until cheese melts.
Serve over chicken.
