Crab Stuffed Chicken Breasts

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

6 x chicken breasts
1/2 cup onion, chopped
1/2 cup celery, chopped
3 tbsp butter
3 tbsp white wine, dry
7 1/2 oz crabmeat, flaked
1/2 cup herb stuffing mix
2 tbsp all purpose flour
1/2 tsp paprika
1 pk hollandaise sauce mix
3/4 cup milk
2 tbsp white wine, dry
1/2 cup Swiss cheese, grated
1 x salt
1 x pepper


  • Skin and bone chicken breasts and pound to flatten.
  • Sprinkle with a little salt and pepper.
  • Cook onion and celery in 3 tablespoons of butter until tender.
  • Remove from heat and add 3 tablespoons wine, the crab and stuffing mix and toss.
  • Divide mixture among the chicken breasts.
  • Roll up and secure with a cocktail stick.
  • Combine flour and paprika and coat chicken.
  • Place in 11" X 7" X 2" baking dish, drizzle with 2 tablespoons of melted butter.
  • Bake uncovered in the oven at 375°F for 1 hour.
  • Transfer to platter.
  • Blend hollandaise sauce mix and milk. Cook, stirring, until thick.
  • Add remaining wine and cheese. Stir until cheese melts. Serve over chicken.
