It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1
1/2 cup milk
1/2 cup mild cheddar, grated
1/2 tsp salt
3 x eggs, separated
1/2 cup cream of rice
2 tbsp butter
1 x grated Parmesan, optional
Method
- Combine
milk and salt and scald.
- Sprinkle
in cream of rice and cook, stirring constantly, for
1 minute.
- Remove
from heat, cover, and let stand for 4 minutes.
- Add
butter and cheese. Stir until melted.
- Beat
egg whites until stiff but not dry.
- Beat
egg yolks until lemon coloured.
- Gradually
blend warm rice mixture into egg yolks.
- Fold
in about 1/3 of beaten egg whites, then remainder.
- Lightly
butter the souffle dish and dust with Parmesan cheese.
- Pour
into an unbuttered, 1 1/2 qt souffle or baking dish.
- Sprinkle
top lightly with Parmesan.
- Bake
in a pre-heated oven at 325°F until puffed and
golden brown, about 40 minutes.
