Fruits of the Forest Pie

"This pie is so versatile and delicious. Just use what you have on hand or find fresh from your grocer or garden. Different everytime, yet delicious everytime. Top it off with a nice dollop of vanilla bean ice cream."

1 x 9-inch pie crust


5 1/2 cup mixture of several fruits (chopped rhubarb, blueberries, blackberries, raspberries, sliced peaches or apples)
3/4 cup sugar
1/3 cup flour
2 tablespoons cornstarch
1/2 teaspoon cinnamon


3/4 cup brown sugar
3/4 cup flour
1/4 cup butter, diced

  • Preheat oven to 400°F.
  • Place crust in large pie pan.
  • Prepare fruit.
  • Mix sugar, flour, cornstarch and cinnamon in large bowl.
  • Gently stir in fruit to coat.
  • Pour filling into prepared pie crust.
  • In medium bowl, mix brown sugar and flour.
  • Mix in butter with a fork or pastry cutter until crumbly.
  • Top pie.
  • Bake for about 40 - 45 minutes.
  • Serve with vanilla ice cream, if desired.
