Curried Rice Pilaf

"Browning the rice slightly makes all the difference in this delicious side dish. It gives the rice a wonderful nutty flavor. There's a beautiful combination of flavors in this dish."

Ingredients

1/4 cup onions
1 garlic clove, minced
2 tablespoons butter or margarine
3/4 cup long grain rice, uncooked
1/2 teaspoon curry powder
1 1/2 cups chicken broth
1/4 teaspoon salt
1/4 cup golden raisins
1/4 cup slivered almonds

Method
  • In a large skillet, saute onions and garlic in butter until tender.
  • Stir in rice and curry powder.
  • Saute for 2 to 5 minutes, until rice is lightly browned.
  • In a saucepan, heat broth and salt. Pour over rice mixture and stir.
  • Cover and simmer for about 25 to 35 minutes or until rice is tender.
  • Remove from heat and stir in raisins and almonds.
