It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
Welsh recipe is one such recipe. If you know where it
originated, or perhaps it is even yours, let me know
and I will add the necessary credits and acknowledgements.

Ingredients
1
lb plain flour
1 tsp baking powder
1 tsp mixed spice
4 oz butter
4 oz lard
6 oz caster sugar
4 oz currants
2 eggs
1 x milk
Method
- Sift
the flour, baking powder and mixed spice and then
rub in the margarine and lard.
- Add
the sugar, currants and beaten egg.
- Mix
in Milk to make a stiff dough and roll out to 1/4"
thick.
- Cut
into 2" rounds and bake on a hot griddle until golden
brown - 4 minutes on each side.
