It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
Welsh recipe is one such recipe. If you know where it
originated, or perhaps it is even yours, let me know
and I will add the necessary credits and acknowledgements.

Ingredients
10
oz flour
4 oz lard
3 oz sugar
1 x egg
1/2 tsp bicarbonate
1 tsp treacle
1 x pinch mixed spice and ginger
4 oz dried fruit
1 cup milk
1 x pinch salt
Method
- Cream
the sugar and lard.
- Mix
in the egg and add the remainder of the ingredients,
having dissolved the bicarbonate in the milk.
- Bake
in a greased tin for about 3/4 hour in the oven at
Gas Mark 5 / 375°F.
- Cut
in half, spread with butter and eat hot.
