It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
Welsh recipe is one such recipe. If you know where it
originated, or perhaps it is even yours, let me know
and I will add the necessary credits and acknowledgements.

Ingredients
4
oz honey
1 tsp cinnamon
4 oz brown sugar
1 x egg
1/2 lb flour
1/2 tsp bicarbonate of soda
4 oz butter or margarine
1 x caster sugar
1 x a little milk
Method
- Sieve
together flour, cinnamon and bicarbonate of soda.
- Cream
butter and sugar. Separate the egg yolk from the white.
- Beat
the yolk into sugar and butter and then gradually
add the honey.
- Stir
in the flour with a little milk as required and lightly
mix it all together.
- Whisk
the egg white until stiff and then fold into the mixture.
- Half
fill small patty tins with the mixture and sprinkle
the top of each with caster sugar.
- Bake
in the oven for 20 minutes on Gas mark 6 / 400°F.
- When
cooked leave to cool and sprinkle a little more caster
sugar.
