It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
Welsh recipe is one such recipe. If you know where it
originated, or perhaps it is even yours, let me know

Ingredients
3
oz cooked and shelled mussels
1 oz celery
1 oz carrot
1 oz breadcrumbs
4 egg yolks
2 oz Herring roe
1 x pinch mixed herbs
1 x pinch dill weed
1 x pinch crushed garlic
1 x Brandy and double cream to taste
1 x seasoning
Method
- Finely
chop mussels, vegetables and herring roe.
- Add
herbs, seasoning and breadcrumbs.
- Blend
well with egg yolks, brandy and cream.
- Cook
for 1/2 hour at 350°F in a bain marie in the oven.
- Cook
and serve with thin pieces of toast.
