Chocolate Chip Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

2 1/4 cup digestive biscuit crumbs
12 oz semi-sweet chocolate chips (divide into two)
2 1/3 cup melted butter (cool to room temperature)
1/2 cup milk
4 tsp instant coffee
1 envelope unflavoured gelatine
16 oz cream cheese, softened
14 oz condensed milk
2 cup whipped cream
1 cup chocolate chips


  • In a large bowl combine the digestive biscuit crumbs, one cup of chocolate chips and the butter then mix well.
  • Press down firmly into 9-inch spring form pan so that the bottom is covered and 2 1/2 inches up the sides. Set aside.
  • In a small saucepan, combine the milk and the instant coffee and then sprinkle gelatine on top. Set aside for 1 minute.
  • Cook over low heat, stirring constantly until gelatine and coffee dissolve. Set aside.
  • In a large bowl, beat the cream cheese until creamy.
  • Beat in the condensed milk and gelatine mixture.
  • Fold in the whipped cream together with the remaining 1 cup of chocolate chips.
  • Pour into prepared pan.
  • Chill until firm (about 2 hours).
  • Run a knife around the edge of the cake to separate from pan and remove the rim.
