Chip Cheesecake

It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
recipe is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
2
1/4 cup digestive biscuit crumbs
12 oz semi-sweet chocolate chips (divide into two)
2 1/3 cup melted butter (cool to room temperature)
1/2 cup milk
4 tsp instant coffee
1 envelope unflavoured gelatine
16 oz cream cheese, softened
14 oz condensed milk
2 cup whipped cream
1 cup chocolate chips
Method
- In
a large bowl combine the digestive biscuit crumbs,
one cup of chocolate chips and the butter then mix
well.
- Press
down firmly into 9-inch spring form pan so that the
bottom is covered and 2 1/2 inches up the sides. Set
aside.
- In
a small saucepan, combine the milk and the instant
coffee and then sprinkle gelatine on top. Set aside
for 1 minute.
- Cook
over low heat, stirring constantly until gelatine
and coffee dissolve. Set aside.
- In
a large bowl, beat the cream cheese until creamy.
- Beat
in the condensed milk and gelatine mixture.

Fold in the whipped cream together with the remaining
1 cup of chocolate chips.
- Chill
until firm (about 2 hours).
- Run
a knife around the edge of the cake to separate from
pan and remove the rim.
