Chocolate and Almond Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

2 cup vanilla wafers, finely crushed
1 cup ground toasted almonds
1/2 cup butter, melted
1/2 cup sugar
12 oz milk chocolate chips
1/2 cup milk
1 envelope unflavoured gelatine
16 oz cream cheese, softened
1/2 cup sour cream
1/2 tsp almond extract
1/2 cup double (heavy) cream, whipped

  • In a large bowl, combine the vanilla wafer crumbs, the almonds, the butter and the sugar and mix well.
  • Press down firmly into 9-inch spring form pan so that the bottom is covered and 2 1/2 inches up the sides. Set aside.
  • Melt over hot (not boiling) water the milk chocolate chips and stir until smooth. Set aside.
  • Pour the milk into a small saucepan and sprinkle the gelatine on top. Set aside for 1 minute.
  • Cook over low heat, stirring constantly until gelatine dissolves. Set aside.
  • In a large bowl, combine the cream cheese, the sour cream and the melted chocolate chips, beating until fluffy.
  • Beat in the gelatine mixture and the almond extract.
  • Fold in the whipped cream.
  • Pour into prepared pan.
  • Chill until firm (about 3 hours). Run knife around the edge of the cake to separate from pan and then remove rim.
  • Garnish with whipped cream and chocolate shavings.
