Marshmallow Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1 cup chocolate wafer crumbs
3 tbsp butter, melted
1 envelope unflavoured gelatine
1/4 cup cold water
16 oz soft cream cheese
3/4 cup sugar
1/3 cup cocoa
1/2 tsp vanilla
2 cup mini marshmallows
1 cup whipping cream, whipped
1/2 cup chopped nuts


  • Combine the wafer crumbs and butter then press onto the bottom of 9-inch spring form pan.
  • Bake at 180°C for 10 minutes.
  • Soften gelatine in water and stir over low heat until dissolved.
  • Combine the cream cheese, sugar, cocoa and vanilla, mixing until well blended.
  • Gradually add the gelatine, mixing until blended.
  • Fold in the remaining gngredients and then pour into the crust.
  • Chill in fridge until firm.
