Peppermint Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1 cup chocolate wafer crumbs
3 tbsp butter, melted
1 envelope unflavoured gelatine
1/4 cup cold water
16 oz Philadelphia cream cheese
1/2 cup sugar
1/2 cup milk
1/4 cup crushed peppermint candy
1 cup whipping cream, whipped
3 oz milk chocolate bars finely chopped


  • Combine the wafer crumbs and butter then press into the bottom of 9-inch spring form pan.
  • Bake at 180°C for 10 minutes and then leave to cool.
  • Soften the gelatine in water and stir over low heat until dissolved.
  • Combine the cream cheese and sugar, mixing until well blended.
  • Gradually add the gelatine, milk and peppermint candy, mixing until blended.
  • Chill until slightly thickened but not set.
  • Fold in whipped cream and chocolate then pour into the crust.
  • Chill in fridge until firm.
  • Garnish with additional whipped cream combined with crushed peppermint candies.
